Man könnte sagen, dass kroatische Weine im Moment in Europa noch weitgehend unbekannt sind. Gegen jede Erwartung beginnt dieses Land, in dem bereits im 5. Jahrhundert die Griechen Wein produzierten, aufzufallen und zeigt der Welt, wie es langsam das Image eines Landes überwindet, in dem die Weinproduktion in staatlicher Hand lag und Wein in Fässern in Tavernen verkauft wurde. Das perfekte Beispiel dafür könnte eine Flasche Testament The Dalmatian Dog Pošip sein, ein reicher, strukturierter Weißwein, hergestellt von der Weinkellerei Testament in Dalmatien (eine der vier Anbauregionen des Landes). Um genauer zu sein, befinden sich die Weinberge dieses Weinguts in der nördlichen Region, in der Stadt Jadrtovac (ganz in der Nähe der mittelalterlichen Stadt Šibenik), wo nur Pošip und Babić angebaut werden. Beide einheimischen Sorten werden ökologisch angebaut und wachsen auf ihren 47 Hektar. Insbesondere war Pošip eine Traube, die exklusiv für Korčula bekannt war. Sie wurde nicht über die Grenzen der Insel hinaus bekannt; jedoch ist diese Traube heute in der Region Dalmatien unverzichtbar. Es war schon immer die Rasse, die sowohl Könige als auch Feuerwehrleute begleitet hat. Nun wird der Dalmatinerhund auch das Weingut Testament als Bild auf der Flaschen des Testament The Dalmatian Dog Babić begleiten, einem Rotwein, der von diesem kroatischen Unternehmen hergestellt wird. Diese Rasse stammt eben genau aus diesem Gebiet von Dalmatien, wo Testament seinen Hauptsitz hat. Nichts könnte typischer für den Ort sein, als der Welt seinen Wein zu präsentieren, der ebenfalls aus der lokalen einheimischen Sorte Babić hergestellt wird, die auf 47 Hektar in der Nähe von Jadrtovac - einer Stadt ganz in der Nähe von Šibenik - ökologisch angebaut wird. Im Fall von Testament The Dalmatian Dog Babić kommen die Trauben direkt aus dem UNESCO-geschützten Weinberg Bucavac. Von dort stammen elegante, dunkle und körperreiche Weine mit großem Alterungspotenzial. Diese Eigenschaften sind zum Teil auf den Karst zurückzuführen, den Kalkstein, aus dem der Boden in dieser Region besteht. Seine helle Farbe ist für die Reifung der Trauben unerlässlich, da sie die Sonnenstrahlen (die direkt auf die Trauben treffen) reflektiert. Auf diese Weise werden die Rispen, sobald die Babić ihren optimalen Reifepunkt erreicht hat, von Hand gelesen (Mitte September) und gelangen direkt in die Weinkellerei. Dort werden sie verarbeitet und verbleiben acht Tage lang in Kontakt mit den Schalen. Testament The Dalmatian Dog Babić gärt in Edelstahltanks und durchläuft auch eine spontane malolaktische Gärung. Nach der Fertigstellung wird dieser Rotwein in zwei Phasen ausgebaut: die erste in Edelstahltanks und die zweite in Holzfässern, in denen er vor der Abfüllung eine kurze Zeit verweilt. Die kroatischen Önologen sind zweifellos dabei, die verlorene Zeit aufzuholen und neue Ideen und Praktiken zu entwickeln, die die alten, klassischen lokalen Weinbereitungsmethoden ablösen. Im Moment ist der kroatische Wein noch recht unbekannt... Aber aufgepasst, er ist im Kommen und wird recht bald von sich reden machen. Weshalb ihm also nicht bei einem Glas Testament The Dalmatian Dog Babić sein Ohr schenken?
